Scalloped potatos and Pork Chops

It's nothing new, but I sure have been craving it a lot lately, and I find that when I have company, it's a large dish that goes quite a long way. Not sure of the size of my casserole dish, but it's bigger than a 9x13 pan. It's just a big shallow oval glass casserole dish. Anyway, I peel 10 to 12 potatos and slice them pretty thin. I have one of those Pampered chef cheese graders that has a couple of slicer inserts. I put the slices in the bottom of the caserole dish. Then I open a can of cream of celery or cream ofcheddar and broccoli soup and spread it all around. Then I cover all of that with several slices of american cheese. I put my pork chops on top and cover it with foil and bake it at 400 degrees for about 2 to 2.5 hours. It really depends on the depth of your casserole dish. You want your potatos to get done and not be crunchy. When I think they're done, I take it out, uncover it, cut the chops off the bone and cut it in to small pieces and mix it in to the potatos. I stir in anywhere from 8 to 12 ounces of sour cream and then top it with graded cheddar cheese. I strongly recommend getting a block and grading it yourself. The flavor is much stronger, especially if you get the sharp cheddar. I put it back in to the oven and reduce the heat to about 325 or so. You won't want to cook that sour cream at a high temperature. I cook it for about 15 more minutes, uncovered and it's ready to eat. It's absolutely delicious and most people rave over it.

If the potatos are big, try using only 7 or 8. I made that mistake this morning. I was expecting company this weekend, but it didn't happen, but since I bought the stuff, I decided to cook the taters anyway. I peeled 12 potatos and sliced them and poured them in to my casserole dish, only to realize that it was overkill. Guess I wasn't paying attention to the size of them. I had to use two cans of soup. I just put them in the oven a few minutes ago. Let's hope it doesn't overflow the pan. this should be some good eatin' though.

I've tried that plenty of times. It really does make for a good meal when you have an unusual amount of people in your home. Well at least in my opinion it does.

I don't really like scalloped potatoes, lol. But if I hadn't just eaten I might have gotten hungry after reading it, lol.

Oh yes, I've tried those and actually prefer them now.
